AMARILLO® VGXP01 c.v. is one of those legendary varieties and is now in the top 10 most widely used hops.

Chinook hops are a product of the USDA breeding program in Washington State. It was originally bred as a bittering hop back in 1985, but has recently been recognized as a dual-purpose hop that is well rounded and suited for many different styles. It has predominately spicy and piney characteristics that transfer through into the flavor and aroma. Chinook also contributes bright grapefruit notes that accentuate its clean bitterness. Chinook hops are noted for their higher Geraniol content, which is biotransformed by yeast into Citronellol a highly-sought-after aroma compound in fruit-forward IPAs. Aroma: Fruity, Piney, Spicy, and similar to cascade. Alpha Acid: 12.5 to 14.0% Typical Usage: Dual purpose . CHINOOK HOP SUBSTITUTIONS Chinook hops carry a lot of the same characteristics as Columbus, Nugget, and Warrior, making these hops the perfect candidates for substitutions. YQH-1320 is a found variety that Tim at YQH describes as "Clean and bright. With tropical, citrus, and stone fruit." Sensory analysis of the 2022 crop picks out aromas of pineapple, guava, lime, white peach, and orange zest. It is big and bold with a fruit-forward character that also offers clean bittering (13 - 15% AA). BRU-1 has a high Myrcene oil content that makes up over 50% of the total oil and contributes aromas of pineapple and stone fruit that is backed by a soft spice. Pale Ales and IPAs are the obvious styles, but might we are going to try brewing some funky Belgian styles. The breeder says BRU-1 pairs well with Citra, Chinook, and other U.S. aroma varieties.

Centennial, named after the centennial anniversary of Washington state, is incredibly well-rounded and useful for bittering, flavor, aroma, and dry-hopping. Centennial is the featured hop in legendary IPAs such as Russian River's Pliny the Elder, Founders' Centennial IPA, and Bell's Two Hearted Ale. These three hop varietals are nearly indistinguishable from one another despite going by different names. 2022 Enigma Hop Profile Enigma™ is a new, exciting hop bred and released by the Hop Products Australia program of the Barth-Haas Group. It is a cross between Tettnanger and an unnamed North American variety, but displays in a wholly unique manner. It is juicy with red fruits like raspberries and red currants, but what sets it apart from other varieties are the white wine notes (similar to Nelson Sauvin), that is most often described as crisp and refreshing "Pinot Gris".
